Banana Cake with Cream Cheese Icing
Ingredients
- 2 1/2 cups flour
- 1 1/2 cups sugar
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup mashed banana
- 2/3 cup buttermilk or sour milk
- 2 eggs
- 1 tsp vanilla
- 1/2 cup shortening
- 1 block cream cheese, softened
- Powdered sugar, about 1/2 bag
- Milk, added a little at a time
- 1 tsp vanilla
Steps
- Preheat oven to 350°F.
- Mix the dry ingredients together.
- Add the mashed banana and remaining cake ingredients and mix until combined.
- Bake at 350°F for about 30 minutes, or until done.
- Beat the softened cream cheese until smooth.
- Gradually mix in the powdered sugar.
- Add milk a small amount at a time until the icing reaches the desired consistency.
- Mix in the vanilla.
- Spread the icing over the cooled banana cake.
